Grilled Feta and Spinach Sandwich
Description
The sandwich is prepared by sautéing frozen spinach with olive oil, sea salt, pepper, and dill until moisture evaporates, creating a flavorful and tender filling. Thinly sliced feta cheese is arranged over a slice of olive oil-brushed bread, topped with the cooked spinach and more feta, then grilled on a pan until golden brown on both sides and the cheese softens without fully melting.
The bread’s crisp exterior contrasts with the creamy feta and tender spinach, bringing a mild herbaceous note from the dill. This sandwich can be served as a light lunch or snack.
Ingredients
- 1 ½ -2 ounces (45-60 g) feta cheese
- 3-4 oz (100-120g) spinach frozen
- 1-2 tbsp extra virgin olive oil
- 1 pinch sea salt fine
- ¼ tsp dill dry or fresh
- 2 whole-grain bread large slices
Instructions
- Slice the feta thinly.
- In a small pan heat 1 tsp extra virgin olive oil, once hot add the spinach, a pinch of salt, freshly ground pepper, and the dill. Sauté the spinach for a few minutes until the liquids have evaporated.
- Brush both sides of both slices of bread with olive oil.
- Warm a medium pan under medium heat and place one slice of bread in the pan, layer with a few slices of the feta, top with the spinach and then continue layering with the rest of the cheese.
- Grill for about 3 to 4 minutes until bread has browned, flip to the other side and grill for a few more minutes until cheese is soft and somewhat melted.
- Remove from pan and serve
