Grilled Greek Chicken Souvlaki

This staple Greek street food is a breeze to make. Marinated chicken breasts are seasoned with Greek herbs and seasoning before being grilled to juicy perfection.

Ingredients
- 2 Pounds chicken breasts Cut into 1 inch cubes
Marinade
- 3 Tablespoon olive oil
- 2 Tablespoon plain greek yogurt
- 2 Tablespoon red wine vinegar
- 4 garlic cloves minced, or 2 tablespoon Garlic Squeeze (see note)
- 2 teaspoon fresh oregano chopped
- 1 teaspoon fresh mint chopped
- ½ teaspoon salt
- ¼ teaspoon fresh black pepper

Instructions
- In a medium sized bowl combine all of the marinade ingredients, then add the chicken pieces.
- Cover and refrigerate overnight or for at least 4 hours.
- When ready to cook preheat grill to 350 degrees, set up for direct and indirect heat.
- Skewer the chicken pieces on wooden or metal skewers.
- Grill over direct heat for 3 minutes, then flip and cook an additional 3 minutes.
- Move to indirect heat and cook until the internal temp of the chicken is 165 degrees (about 5-10 minutes).
- Serve with tzatziki sauce and warm pita bread.
Notes
- If using Garlic Squeeze instead of fresh garlic, reduce the olive oil in the marinade by 1 tablespoon.
