Salmon:

  • 4 salmon fillets
  • ¼ cup cChosen Foods Garden Goddess Dressing

Chickpea Salad

  • 1 can chickpeas drained
  • cup fresh herbs dill and parsley
  • 1 lemon zest
  • ½ cup tomatoes diced
  • 2 scallions minced
  • 3 tablespoons Chosen Foods Garden Goddess Dressing.

Grilled veggies

  • sweet peppers
  • mushrooms
  • tomatoes
  • lemons
  • 2 tablespoons Chosen Foods Garden Goddess Dressing

To serve:

  • 3 cups arugula
  • avocados sliced
  • 2 cups quinoa cooked
  • fresh tomatoes

Notes

  • Always buy fresh salmon
  • Using skin on or skin off is totally your choice.
  • Buy a selection of Chosen Foods House Dressings to use as marinades for this recipe and as a finishing sauce.
  • Spraying the stovetop grill or BBQ grill with avocado oil is best to avoid sticking.
  • Make sure to brush the salmon on both sides with the dressing and avoid over soaking the salmon in sauce.
  • Don’t flip the salmon too soon once placed on the grill. Allow at least 3-4 minutes of cooking before doing so.
  • Once cooked, and while the salmon is still hot, immediately drizzle a light coating of the Chosen Foods dressings to infuse more flavor and moistness into the salmon.
  • Keep the cooked salmon in the refrigerator for at least 3 days.
  • Serve the lunch bowl with a cooked grain or bean (for a filling lunch) and plenty of fresh veggies.
  • Salmon fillets should be properly cooked after being grilled for 3-5 minutes on each side of the fish. You will know when it is properly cooked as it will flake apart evenly with a fork.
  • Cooking grilled salmon is best cooked on high heat. This cooks the fish quickly, which means it retains more of its moisture and keeps a better texture. It’s best to cook salmon to a temperature of 145 degrees F.
