Harcha

Harcha is a Moroccan bread that takes the shape of a galette and is prepared with semolina and butter or olive oil.

Ingredients

Servings
  • 4 cups fine semolina flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 5 teaspoons baking powder
  • 14 tablespoons butter melted
  • cup milk

Equipment

  • Stand mixer
  • Cookie cutter

Instructions

  1. In the bowl of the stand mixer, add the semolina, sugar, salt, baking powder and mix.
  2. Add the melted butter and mix to obtain a sanded mixture.
  3. Add the milk, and mix for one minute.
  4. Let the dough rest for 15 minutes at room temperature, the time it takes for the semolina to absorb the butter and the milk.
  5. Sprinkle the work surface with some semolina.
  6. Spread the dough with your hands (no rolling pin) and then cut out circles using a cookie cutter or a large glass.
  7. Heat a non-stick frying pan over medium heat and cook each harcha on both sides for 3 to 4 minutes on each side.
  8. Serve hot or warm.
