Ingredients

  • 2 large boneless skinless chicken breasts
  • 4 ounces softened cream cheese
  • 1 Tablespoon ranch seasoning mix
  • 4 lices Bacon
  • 4 lices cheddar cheese
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chipotle chile powder optional

Instructions

  1. Preheat the oven to 350 degrees F. Line a pan with foil.
  2. Cook the bacon until it is just over about halfway cooked. Remove from oven and set aside.
  3. Make slices or slits across (horizontally) each of the chicken breasts. Make each slice about 1/2 inch apart. See photo for reference.
  4. In a small bowl, stir together the Ranch seasoning mix with the cream cheese.
  5. Using a knife, spread a small amount of Ranch seasoned cream cheese inside each slit.
  6. Cut the bacon slices and cheese slices to sizes that will fit into the cuts of the chicken.
  7. Place a slice each of cooked bacon and cheddar cheese into each cut.
  8. Season the chicken breasts with salt, pepper, garlic powder, paprika, and if you want to add a little smoky spice, add a little chipotle chile powder.
  9. Place the chicken breasts in a baking pan and cook in a preheated oven for about 40 minutes. (Cooking time may vary depending on the sizes of the pieces of chicken. If the chicken pieces are smaller, they may cook in less time.)

Notes

  • Be careful to not cut the chicken all the way through. Cut only about 3/4th of the way through the chicken. If you. cut all the way through, then the cheese will melt below the chicken and can burn while baking.
  • Use large thick chicken breasts for this so you can cut slits deep enough to hold the bacon and cheddar.
  • Be sure to let the cream cheese soften before using. This makes it much easier to work with.
