Hasselback Sweet Potatoes are a unique way to serve a classic dish!

Ingredients
- 4 medium sweet potatoes scrubbed
- 2 tablespoons unsalted butter melted
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme finely chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley finely chopped

Instructions
- Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- Carefully make thin slices along each sweet potato, stopping just before you cut through so that the slices stay connected at the bottom.
- Mix the melted butter, olive oil, thyme, salt, and pepper, and brush the mixture over and between the slices of each sweet potato.
- Bake for about 60 minutes, until the potatoes are tender inside and crispy on the outside.
- Remove from the oven, sprinkle with Parmesan cheese and parsley, and serve.
