Hawthorn Iced Tea

This Hawthorn Iced Tea uses dried hawthorn berries simmered for 45 minutes to extract their tart flavor, balanced with sugar for sweetness. After cooling and straining, it's served chilled with ice, offering a refreshing, slightly tangy beverage with a subtle fruity note. Honey can be used to adjust sweetness, dissolving well in the cooled tea. This recipe is suited for those seeking a distinctive, fruity iced tea made from hawthorn berries.

Description

Hawthorn Iced Tea is made by simmering dried hawthorn berries in water until their flavors infuse completely. The long simmer extracts the tart, slightly sweet essence of the berries, which is mellowed by stirring in sugar after cooking. Once cooled and strained, the tea becomes a clear, iced drink with a gentle sweetness and a fruity character unique to hawthorn. Adding honey at serving time allows customization of sweetness without clouding the tea.

The preparation method focuses on well-done extraction by simmering, rather than quick steeping, allowing a deep flavor profile. Serving chilled with ice enhances its refreshing qualities, making it a pleasant cold beverage option.

This tea pairs well with light food or can be consumed on its own as a cooling drink. Adjust sweetness after cooling for the best flavor balance.

Ingredients

Servings
  • 2 1/2 ounces hawthorn berries 70g, dried; Chinese
  • 6 cups water (1.4L)
  • 1/4 cup sugar (50g)

Instructions

  1. Add the dried hawthorn and water to a medium pot. Bring to a boil. Turn the heat down to a simmer and cook for 45 minutes. Turn the heat off, and add the sugar, stirring until dissolved.
  2. Allow to cool completely, and then strain in a fine-meshed sieve and serve with ice. If the tea is too tart for your taste, sweeten to taste with honey, which dissolves more easily than sugar.
