Healthy Banana Muffins Recipe

These Healthy Banana Muffins combine mashed ripe bananas with a mixture of whole wheat and all-purpose flours, oats, and oat bran for added texture and nutrition. Sweetened naturally with honey and flavored with cinnamon and vanilla, the muffins offer a moist crumb with a hint of sweetness. A sprinkle of raw or brown sugar on top adds a slight crunch and caramelized note after baking. They are suitable for a wholesome breakfast or snack.

Description

This recipe blends neutral oil, honey, eggs, mashed bananas, milk, and vanilla to form the wet base. The dry ingredients include baking soda, salt, cinnamon, a mix of flours, oats, and oat bran. The combination creates a thick batter that, when baked at 325°F for about 22 minutes, yields soft and tender muffins with flecks of oats and bran for subtle chewiness.

The muffins have a gentle sweetness from honey and banana, complemented by warm spices. Topping with raw or brown sugar before baking creates a lightly crisp surface contrast to the soft interior.

These muffins are suitable for packing as a nutritious snack or a quick on-the-go breakfast. They keep well at room temperature for a couple of days and freeze well up to 3 months. Removing from tins after partial cooling helps them maintain texture during further cooling.
