Healthy Butternut Squash & Apple Soup

Butternut Squash & Apple Soup is a great belly warmer, and super easy to make! It's even low fat and good for you!

Ingredients
- 3 cups butternut squash peeled and cut into cubes (see note for how to make this easy)
- 4 cups vegetable stock
- 1 cup onion diced
- 1 cup apple peeled, diced
- 1/2 teaspoon salt
- 1/2 teaspoon cracked pepper
- 1 pinch nutmeg
Instructions
- Add all ingredients to a large pot, or dutch oven.
- Bring to a boil and simmer for 15 to 20 minutes, or until the squash is tender.
- Using an immersion blender, puree the soup.
- Taste for seasoning, and adjust if necessary.
- Devour.
