Healthy Chocolate Zucchini Bread

  • 1    cup whole wheat flour 127gms
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup zucchini grated, packed
  • 1/3 cup avocado oil
  • 1/4 cup yogurt
  • 1/2 cup sugar granulated
  • 2 eggs large, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate chips I used mini (optional)

Instructions

  1. Pre-heat the oven at 350°F (175°C). Grease a 9x5 loaf pan or line a parchment paper in the pan.
  2. Take a large bowl and add the dry ingredients – whole wheat flour, cocoa powder, baking soda, baking powder and salt. Once you have mixed all the dry ingredients well, set them aside.
  3. Take another large bowl and add the grated zucchini along with yogurt, oil, sugar, eggs, and vanilla extract. Mix all of them together.
  4. Then fold the dry ingredients in to the wet ingredients with a spatula. Do not overmix.
  5. At last, add those chocolate chips for that chocolaty goodness. Save some of the chocolate chips to add on top of the batter once you have poured it into the pan.
  6. Pour the batter into the prepared baking pan. Spread the chocolate chips evenly over the batter.
  7. Slide the pan into the oven and bake for up to 40-50 minutes or until done. Insert a toothpick to check whether the bread is done. If the toothpick comes out clean, take out the pan and let it cool for about 10 minutes.
  8. Remove the zucchini bread from the pan and place it on the wire rack.
  9. Slice and enjoy this healthy zucchini bread.

Notes

  • Zucchini: As zucchini has a lot of water content, it better to use a large hole grater to grate it. This will prevent the zucchini from turning into water and mush. You can also dab the grated zucchini with paper towel to reduce the water. But don’t make it completely dry.
  • Storing: You can store on the counter for 2-3 days wrapped in a plastic wrap.
  • Freeze zucchini bread: You can freeze this bread wrapped in plastic wrap or in a freeze ziplock bag. To enjoy, take it out of the freezer and let it come to room temperature. You can also warm it in the microwave for 10 seconds.
