Healthy Paleo Sweet Potato Casserole

Ingredients

  • 5 sweet potatoes peeled and cubed
  • 4 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • ½ cup raisins
  • 1 cup shallots finely chopped
  • 2 tablespoons butter
  • ½ to 1 cup pecan pieces
  • ½ cup maple syrup
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350ºF.
  2. In a medium bowl, toss sweet potatoes with olive oil, balsamic vinegar, salt and pepper, raisins and shallots.
  3. Place sweet potato mixture in a 9x13 inch-baking dish.
  4. In a skillet over medium heat, melt butter. Add pecans and stir until fragrant, about 3 minutes. Add maple syrup and stir until most of the liquid has been absorbed, about 3 minutes.
  5. Top potatoes with caramelized toasted pecans, cover with aluminum foil and bake in preheated oven 50-60 minutes or until sweet potatoes are tender.
