Healthy Vegan Oatmeal Bread

This Healthy Oatmeal Bread is made with just a handful ingredients and so delicious. It has a wonderful sweet aroma from the oats and maple syrup and perfectly crispy crust. This homemade loaf can be made by hands or in Kitchen Aid.

Ingredients

  • 1 c all-purpose flour
  • 1 c whole wheat flour
  • ½ c +2 tbsp rolled oats
  • 1 c water room temperature
  • 1 tablespoon maple syrup or Agave
  • 1 teaspoon instant dry yeast
  • ½ teaspoon salt
  • 1 tablespoon neutral oil grape seed or sesame oil

Instructions

Combine the ingredients

  1. In a large bowl (or Kitchen Aid) mix together all-purpose flour, whole wheat flour, ½ c of rolled oats and yeast.
  2. Add water, Maple syrup and give everything a quick stir. Mix with a spoon (or Speed 2 on Kitchen Aid fitted with a hook) until combined. Cover the bowl with a towel and set aside for 20 minutes, (see Note 1).

Knead the dough

  1. Gradually add oil, salt and knead the dough until it's elastic, about 5-10 minutes, (see Note 2). Cover the bowl with a towel and place in a warm place for 1 hour until the dough doubles in size.

Shape the dough into a log

  1. After the dough doubled in size, place the dough on a very lightly floured surface and lightly flatten it with hands. Roll it into a tight log slightly pinching the seam.
  2. Lightly wet your hands and pat the log. Spread the remanning 2 tablespoon of oats on a working surface and roll the log into the oats. Transfer the log on a parchment lined baking dish, cover with a kitchen towel and place in a warm place for 1 hour until the dough doubles in size.

Bake

  1. Preheat the oven to 410 F.
  2. Fill a rectangular or square (9 x 9 inches) baking dish with a few cups of hot water and place the dish in the oven on a lowest rack (see Note 3). In 30 seconds place baking dish with the loaf into the oven and bake for 10 minutes.
  3. After 10 minutes, carefully remove baking dish with the water from the oven, reduce the temperature to 360 F and bake for 30 more minutes.
  4. Remove bread from the oven and cool on a wire rack.

Notes

  • Note 1
  • If the dough comes out too dry, you can add 1-2 tablespoon of water.

  • Note 2
  • Without Kitchen Aid: You can start kneading the dough in a bowl. After you added all oil, you can either continue kneading in the same bowl or if it's easier for you, transfer the dough on a working surface and finish kneading there. 
  • With Kitchen Aid: After you added the oil, knead on Speed 2 until the dough starts to pull away from the sides of a bowl, about 3-5 minutes.

  • Placing the empty baking dish with a water into the oven helps to make the oven "steamy". This in turn will prevent the bread from cracking and make the crust perfectly crispy.
