High Protein Salad Meal Prep

This high-protein recipe is the perfect salad meal prep idea. Prep it for lunches, a BBQ, picnic, or potluck. It's really easy and loaded with protein to keep you full.

Ingredients

  • 250 g fusilli pasta cooked, cord-style
  • 2 cups snow peas sliced
  • 2 cups strawberry diced, fresh
  • ½ red onion thinly diced, medium
  • 1 - 500 ml lentils canned
  • ¼ cup pistachio chopped
  • 3 egg grated, hard boiled
  • ½ avocado large
  • 4 tbsp. rice wine vinegar
  • 3 tbsp. olive oil
  • 1 tbsp. salt
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • ½ tsp. chili flakes
  • 2 tbsp. basil chopped, fresh
  • 2 tbsp. mint chopped, fresh

Instructions

  1. Cook the fusilli according to the instructions on the package. Allow to cool.
  2. Drain and rinse the lentils and set aside.
  3. In a large bowl, combine ALL of the ingredients. 
  4. Mix to combine and adjust seasoning to taste. 
  5. Enjoy this bright and delicious summer salad!!
