Description
Holodnik is a cold soup made primarily from cooked beets, combined with a buttermilk and cooled water mixture, seasoned with salt and a touch of sugar. It includes fresh vegetables such as diced cucumbers and sliced green onions, enhanced by fresh dill for a fragrant note. The soup is chilled thoroughly before serving.
The resulting dish offers a smooth yet textured experience with tender shredded beets and crisp cucumber pieces suspended in a tangy, creamy liquid base from the buttermilk. The dill adds a fresh herbal accent, while the salt and sugar balance the natural sweetness and earthiness of the beets.
Common accompaniments include halves of boiled eggs or a dollop of sour cream, which provide extra protein and creaminess. This soup is well-suited for warm days as a light, cooling starter or side.
Ingredients
- 3 beet large cooked red; or 5 small cooked
- 2 quarts water boiled and cooled
- 1 quart buttermilk
- 1 onion or 3 green onions, medium
- 4 cucumber
- 1 Tbsp salt or add to taste, sea salt
- 1 tsp sugar
- 1 dill bunch
- 4-6 egg optional, boiled

Instructions
- Boil beets, drain, and let them cool.
- Boil 2 quarts of water and let it cool. Mix cooled water with 1 quart of buttermilk in a large pot.
- Shred beets and add them to the pot with water/buttermilk mixture.
- Add salt and sugar. *I recommend starting with 1 Tbsp salt and adding more to taste, you may like it sweeter or saltier.
- Next add sliced green onions, dill and diced cucumbers.
- Place completed soup in the fridge to let it cool completely.
- Enjoy it with half of a boiled egg. You can also serve it with a dollop of sour cream.
