Description
This pudding blends the smoothness of a traditional chocolate custard with the warm, mellow notes of Baileys Irish Cream. The cooking method involves whisking together sugar and cornstarch, adding milk and egg yolk, then heating gently until the mixture thickens into a creamy base. Once removed from heat, Baileys and vanilla extract are incorporated, followed by coarsely chopped semisweet chocolate, which melts into a velvety finish.
After cooking, the pudding is poured into individual serving dishes, cooled slightly, then covered and refrigerated to set and chill for at least two hours. This chilling step allows the pudding to thicken further and develop a smooth, firm texture. Once ready, optional garnishes elevate the presentation and add texture.

Ingredients
- ¼ cup sugar
- ¼ cup cornstarch
- 1 ⅓ cups milk
- 1 egg yolk

- ¼ cup Baileys Irish cream

Instructions
- In a medium saucepan combine sugar and cornstarch whisking to thoroughly incorporate. Add milk and whisk until dry ingredients are dissolved. Next, whisk in the egg yolk and cream.
- Place the pan over medium heat, whisking constantly until the mixture comes to a full boil and thickens.
- As soon as the mixture thickens, remove the pan from the heat and whisk in the Baileys Irish Cream and vanilla.
- Add chocolate and whisk until it is completed melted and smooth.
- Pour pudding into individual serving dishes. Let the pudding cool slightly then cover the tops with plastic wrap to prevent a skin from forming. Refrigerate for at least 2 hours before serving.
- If desired, garnish with fresh whipped cream and chocolate curls.
