Homemade Fresh Tomato Pizza

There's nothing like Homemade Pizza, especially when it is made with fresh tomatoes, leave it simple or add a couple of your favourite toppings.

Ingredients

  • 1 ready made pizza dough or homemade
  • 18 grape or cherry tomatoes halved (8-10 Roma tomatoes depending on size)
  • teaspoons oregano
  • 4-5 leaves fresh basil chopped
  • ½ teaspoon salt
  • tablespoons olive oil
  • ½-¾a cup firm mozzarella shredded

EXTRA TOPPINGS (just a few suggestions)

  • 2 Italian sausages (casing removed)
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 8-10 mushroom sliced
  • 8-10 Black olives sliced

Instructions

  1. Pre-heat oven to 425F (250C), drizzle a 14x9.5 inch (37x24 cm) cookie sheet or pizza pan.
  2. If using store bought dough, then knead the dough back into a ball, cover the dough with a towel (cotton) and let it rest for 30 minutes. If using homemade dough, such as this Best Pizza or this Easy Pizza Recipe then follow the directions.
  3. In a medium bowl add the halved cherry tomatoes, 2 tablespoons of oil, oregano, salt and chopped fresh basil, gently mix together.
  4. Top the pizza dough with the tomato mixture (and any extras you wish to add except the olives) and the cheese, bake until the crust is cooked, golden brown (check underneath) and the cheese is golden and melted or bake for about 10 minutes then remove from the oven and top with the shredded mozzarella and olives if adding, return to the oven and continue to bake for another 3 or 4 minutes or until the cheese has melted. Remove from oven, slice and serve. Enjoy!

Notes

  • You definitely can, prepare the dough, place it in a lightly greased bowl, cover with plastic wrap and let rise overnight in the refrigerator, leaving the dough to rise in the fridge from 12-24 hours is considered the best amount of time. Although the dough can remain in the fridge for up to 3-4 days. Best pizza dough will easily make 2-3 pizzas, and the easy dough will make a large thick crust pizza.
  • Any leftovers should be stored in an airtight container and refrigerated, it will keep for up to 3-4 days. You can re-heat it in the oven or in the microwave. Be sure not to leave it out at room temperature for more than two hours.
