Homemade Granola Bars Recipe

Who needs store-bought breakfast bars when you can make these No Bake Granola Bars? You’ll use oats, peanut butter, honey, and various other ingredients to create the perfect breakfast treat.

  • cups thick old-fashioned rolled oats
  • ½ cup crushed unsalted peanuts
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 1 cup creamy peanut butter
  • ½ cup honey
  • 2 tablespoons coconut oil
  • 1 teaspoon pure vanilla extract
  • ¼ cup semisweet chocolate chips plus more for sprinkling
  • ¼ cup white chocolate chips plus more for sprinkling

Instructions

  1. Prepare an 8x8-inch baking pan by lining with parchment paper. Set aside.
  2. In a large bowl, stir together the oats, crushed peanuts, cinnamon, and sea salt until well-combined. Set aside.
  3. In a small saucepan, heat the peanut butter, honey, and coconut oil over low heat until melted and smooth. Remove from heat and stir in the vanilla extract.
  4. Pour the peanut butter mixture over the oat mixture and stir well to combine.
  5. Fold in the semisweet and white chocolate chips.
  6. Press the mixture into prepared pan. You’ll want to press fairly hard to make sure the bars stick together.
  7. Sprinkle with a few extra chocolate chips if desired and press them gently onto the bars to stick.
  8. Chill for 1-2 hours before cutting into bars. Keep refrigerated for best results.

Notes

  • Storage: Store homemade granola bars in an airtight container at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or in the freezer for up to 2 months. 
  • Make sure to wait a minimum of 1 hour before cutting into your bars. They won’t cut well if you don’t chill them the full amount of time. 
  • Feel free to press more chocolate chips into your bars at the end. The extra chocolate chips are perfect for chocolate lovers.
  • When adding your mixture to the pan, press hard enough to get your bars to stick together with ease.
