Who needs store-bought breakfast bars when you can make these No Bake Granola Bars? You’ll use oats, peanut butter, honey, and various other ingredients to create the perfect breakfast treat.

Ingredients
- 2½ cups thick old-fashioned rolled oats
- ½ cup crushed unsalted peanuts
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1 cup creamy peanut butter
- ½ cup honey
- 2 tablespoons coconut oil
- 1 teaspoon pure vanilla extract
- ¼ cup semisweet chocolate chips plus more for sprinkling
- ¼ cup white chocolate chips plus more for sprinkling
Instructions
- Prepare an 8x8-inch baking pan by lining with parchment paper. Set aside.
- In a large bowl, stir together the oats, crushed peanuts, cinnamon, and sea salt until well-combined. Set aside.
- In a small saucepan, heat the peanut butter, honey, and coconut oil over low heat until melted and smooth. Remove from heat and stir in the vanilla extract.
- Pour the peanut butter mixture over the oat mixture and stir well to combine.
- Fold in the semisweet and white chocolate chips.
- Press the mixture into prepared pan. You’ll want to press fairly hard to make sure the bars stick together.
- Sprinkle with a few extra chocolate chips if desired and press them gently onto the bars to stick.
- Chill for 1-2 hours before cutting into bars. Keep refrigerated for best results.
Notes
- Storage: Store homemade granola bars in an airtight container at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or in the freezer for up to 2 months.
- Make sure to wait a minimum of 1 hour before cutting into your bars. They won’t cut well if you don’t chill them the full amount of time.
- Feel free to press more chocolate chips into your bars at the end. The extra chocolate chips are perfect for chocolate lovers.
- When adding your mixture to the pan, press hard enough to get your bars to stick together with ease.
