Homemade Ramen Noodles

Ramen noodles are a classic Japanese cuisine. Wanna know how to make homemade fresh ramen noodles from scratch? This homemade fresh ramen noodle recipe uses Philips pasta noodle maker. Not only is it faster, but also it creates less mess and noodles will be done in around 15 minutes!

Ingredients

  • 2 cups bread flour (Phillips pasta machine flour measuring cups, 2cups, around 500g)
  • Some water (After putting the egg and kansui, fill the water up to 190 ml mark. Total liquid around 190ml.)
  • 1 large egg
  • 1 tablespoon kansui (Potassium carbonate & Sodium Bicarbonate solution)
  • ½ teaspoon salt

Instructions

  1. Put 2 cups of bread flour into the Philips pasta noodle machine. 
  2. Then, add ½ teaspoon of salt. Cover the top lid.
  3. Crack a large egg and put it into the measuring cup.
  4. After that, put 1 tablespoon of kansui and pour some water to fill up the 190ml water Mark in the liquid measuring cup. All the liquid should be around the mark 190ml. However, I prefer a little over the mark, but not too much. Just don’t need to be perfect.
  5. Next, mix it well.
  6. Plugin the machine and choose 2 cups. Press the start button and let the machine run for a few minutes. 
  7. After the machine runs a few seconds, pour the egg mixture liquid slowly over the holes on the lid. Let the noodle machine run and noodles will come out. Cut the desired length. Noodles will be done around 15 mins for 4-6 servings.
  8. Boil some water in a wok.
  9. When the water is boiling, put the noodles. Let it cook for around 2 minutes and check it every 30 seconds until it cooks. (From my experience, I cook the noodles for around 2-3 minutes. If I use stir fry chow mein, I will cook it for around 2 minutes.) 
  10. Drain the noodles and rinse with cold water. You can use the noodles for soup or stir fry them.  

Notes

  • I used bread flour instead of all purpose flour because it has a better texture and when you cook them, it will not break easily.
  • Choose 2 cups setting, add 2 cups of bread flour. 
  • Make sure to level off flour and use their flour measuring cup. 
  • Add ½ teaspoon salt into the flour and run the machine for a few seconds. Then, pour the liquid. 
  • Remember to use their liquid measurement cup. Crack an egg, put 1 tablespoon of kansui (potassium carbonate & Sodium Bicarbonate solution) and pour water to fill up the 190 ml water mark on the measuring cup. I prefer just a little bit over the 190ml mark, you don’t need to be perfect at 190ml. After that, whisk the liquid mixture very well.
  • Turn on the noodles machine and push 2 cups setting, slowly add the liquid mixture into the Philips pasta machine and let it run.
  • When the noodles are coming out use a container to hold them and cut the desired length.
  • Towards the end, sometimes the dough comes together and is hard to press into the machine. In this case, I will stop the machine, open the lid and use my hands to break down the dough, so it’s easier for the machine to pick up the dough and press into noodles.
  • The noodles at the end are not as pretty as when they first came out, but it is still good and ok.
