Homemade salsa is easy to make and oh-so delicious. We've included a few salsa varieties beyond the base recipe, and canning instructions as well!

Ingredients
- 1/2 small red onion minced
- 2 tablespoons lime juice about 1 lime
- 5 medium roma tomatoes diced
- 1/2 cup chopped fresh cilantro
- 1 medium Jalapeño stem removed and finely minced
- 1 clove minced garlic
- 1/4 teaspoon salt
Instructions
- Mince 1/2 small red onion and place it into a mixing bowl. Drizzle with 2 tablespoons lime juice and let sit while preparing the rest of the ingredients.
- Dice 5 medium roma tomatoes1 medium jalapeno and prepare 1/2 cup chopped fresh cilantro. Add to the onions along with 1 clove minced garlic and 1/4 teaspoon salt.
- Stir until well combined. Season with additional salt to taste.
Notes
- For Tomatillo Salsa (Green Salsa or Salsa Verde): simply replace the roma tomatoes with husked and quartered tomatillos.
- For Roasted Tomato Salsa: place the roma tomatoes onto a baking sheet and place 6 inches beneath the broiler in your oven. Broil until the skins are blackened, rotating every few minutes. Once skins are blackened, let cool and remove peels. Then proceed with the recipe as written.
