Homestyle Chicken Noodle Soup
Description
The recipe starts by softening onions, carrots, and celery in butter to build a mild vegetable base, followed by adding garlic for a fragrant layer. Chicken stock and bay leaves are added and brought to a boil to develop a rich broth. Bone-in, skinless chicken breasts simmer until cooked through, imparting flavor and tenderness.
Once the chicken is cooked and diced, it and the egg noodles are returned to the pot to cook until tender. Finally, fresh parsley and dill are stirred in, along with lemon juice, to brighten and deepen the flavor. Seasoning with salt and pepper throughout adjusts the taste.

Ingredients
- 2 tablespoons butter unsalted
- 1 onion diced
- 2 carrot peeled and diced
- 2 ribs celery diced
- 3 cloves garlic minced
- 8 cups chicken stock
- 2 bay leaf
- kosher salt to taste, freshly ground
- black pepper to taste, freshly ground
- 2 ½ pounds chicken breast bone-in, skinless
- 2 ½ cups egg noodles wide
- 2 tablespoons parsley chopped fresh leaves
- 2 tablespoons dill chopped, fresh
- 1 tablespoon lemon juice or more, to taste, freshly squeezed
Instructions
- Melt butter in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
- Stir in garlic until fragrant, about 1 minute.
- Stir in chicken stock and bay leaves; season with salt and pepper, to taste.
- Add chicken and bring to boil; reduce heat and simmer, covered, until the chicken is cooked through, about 30-40 minutes. Remove chicken and let cool before dicing into bite-size pieces, discarding bones.
- Stir in chicken and pasta and cook until tender, about 6-7 minutes.
- Remove from heat; stir in parsley, dill and lemon juice; season with salt and pepper, to taste.
- Serve immediately.
