Description

This recipe starts by arranging 12 chicken wings in a single layer on a lined roasting pan, drizzled with olive oil and honey for moisture and sweetness. Fresh lime juice is squeezed over the wings, and halved limes are nestled among them to infuse brightness. A generous pinch of salt seasons the wings.

The wings cook at a low oven temperature (140ºC/120ºC fan/275ºF approx.) for 25 minutes to cook through gently without drying, then the heat is increased to 200ºC/180ºC fan (about 400ºF) for an additional 20 minutes to dry and crisp the skin, creating a sticky and slightly charred finish.

The wings are served with extra lime wedges for additional acidity. The method ensures tender meat with a glossy, flavorful tangy-sweet coating, suitable for an easy appetizer or snack.

  • 12 chicken wings
  • 1 tablespoon olive oil
  • 2 tablespoon honey
  • 2 lime
  • salt generous pinch

Instructions

  1. Pre-heat you oven to 140ºC/120ºC fan forced/Gas mark 1.
  2. Line a roasting tin with cooking paper.
  3. Lay the chicken out in a single layer.
  4. Measure out the olive oil and drizzle over the chicken.
  5. Without washing up the spoon, measure out the honey. Drizzle it over the chicken. It should slide easily off the spoon.
  6. Cut the lines in half and squeeze the juice over the chicken. Nestle the cut limes in-between the chicken.
  7. Season with salt and place in the oven for 25 minutes.
  8. After this time turn the heat up to 200ºC/180ºC fan forced/Gas mark 6 and cook for a further 20 minutes until crisp, charred and sticky.
  9. Serve with extra wedges of lime (and maybe some napkins)
