Ingredients
- 8 slices Bacon diced
- 1/4 cup finely diced onion or shallot
- 3/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1/2 cup apple cider vinegar

Instructions
- Cook the bacon in a skillet over medium heat until crisp. Remove bacon and set aside, leaving about 1/4 cup of bacon grease in the skillet.
- Add the onion to the skillet and sauté until soft and translucent, about 5 minutes.
- In a bowl, whisk together sugar, cornstarch, salt, and pepper. Gradually whisk in water and vinegar until smooth.
- Pour the vinegar mixture into the skillet with the onions, stirring constantly. Cook over medium heat until the dressing thickens, about 1 minute.
- Return the cooked bacon to the skillet, stir to combine. Serve the dressing warm over your favorite salad.
