  • ½ cup roasted red peppers sliced
  • 1 can (4 oz) diced green chilis
  • 1 tablespoon garlic minced
  • 1 tablespoon olive oil
  • 4 tilapia filets
  • 2 tablespoons Italian seasoning
  • 1 teaspoons salt
  • 2 teaspoons ground black pepper
  • 1 tablespoon red pepper flakes
  • 1 large lemon sliced
  • Parsley for Garnish

Instructions

  1. Preheat your oven to 375 degrees and grease a 9x13 baking dish with non-stick cooking spray.
  2. Add fire roasted tomatoes and roasted red peppers. Diced green chilis, and minced garlic to your baking dish and give it a quick mix to combine the ingredients lightly.
  3. Spread the mixture out in an even layer in your baking dish.
  4. Using a mixing bowl, coat your fish front and back, in olive oil and season it with Italian seasoning, salt, black pepper, and red pepper flakes.
  5. Place your seasoned fish filets into your baking dish and press them down into the fire roasted tomato mixture but do not cover them. Top them with sliced lemon.
  6. Bake your fish in your preheated oven uncovered for 25 minutes, or until each filet is easily flaked with a fork and no longer translucent.
  7. Garnish your fish with parsley and serve warm.
