How to Make Dulce de Leche
Description
This dulce de leche recipe starts by combining milk, sugar, and vanilla in a heavy-bottomed saucepan and heating gently to dissolve the sugar. The mixture is simmered uncovered for over an hour and a half, stirring occasionally, allowing it to thicken and develop deep caramel flavors and color. The long, slow cooking process encourages Maillard reactions that produce the signature hue and taste.
Separately, a can of condensed milk is prepared by placing it on its side in a pot filled with water to cover at least two inches above the can. This is simmered gently with the water level maintained to slowly cook the condensed milk for three hours, transforming it into dulce de leche with smooth texture and sweet caramel flavor.
The finished dulce de leche can be used as a spread, filling, or topping for a variety of desserts.
