How to Poach Chicken

Ingredients
- 1 pound boneless skinless chicken breasts or thighs breasts, thighs, or both
- ½ teaspoon salt
- ½ yellow onion sliced
- 4-6 garlic cloves peeled
- 5 whole black peppercorns
- 4 parsley sprigs
- 2 fresh Rosemary
- 1 bay leaf

Instructions
- Season chicken lightly with salt.
- Transfer the chicken to a large pot or dutch oven with a lid. Add the onion, garlic, herbs and spices.
- Add chicken broth to cover the chicken halfway and bring mixture to a simmer without letting it boil.
- Simmer for 5 minutes, turn off heat, then cover the pot and let stand for 15 minutes.
- Remove the chicken from the pot, reserve the broth for another recipe and discard the aromatics.
- Allow the chicken to rest for a few minutes, then slice and serve.
Notes
- Storage: Store in an airtight container for up to 4 days.
- Freezing Instructions: Place the cooled chicken into a freezer safe container or bag. It will keep well for up to 3 months.
