Ice Cream Maker Caramel Chew Chew. How to make your favourite Ben & Jerrys caramel chew chew using your ice cream maker. Not only is this Ben & Jerry’s copycat recipe amazing, but it is also much cheaper, uses natural ingredients and is much lower in calories.

  • Ice cream maker
  • Hand mixer
  • Instant Pot

Caramel chew chew Ingredients:

  • 250 ml whole milk
  • 250 ml single cream
  • 4 egg yolks
  • 125 g caster sugar
  • 1 Tbsp vanilla essence
  • 1 can condensed milk
  • 100 g Rolo/Munchie Chocolate

Instructions

  1. Submerge a can of condensed milk in the instant pot and steam for 40 minutes until your condensed milk becomes caramel. Allow to cool.
  2. Using an electric hand mixer or a whisk beat together the egg yolks and the sugar until they are fluffy.
  3. Heat milk and single cream in a small pan and add the vanilla essence.
  4. Add the egg mixture to the pan and stir on a high heat for about 5 minutes.
  5. Transfer the mixture to the fridge and allow to cool for at least an hour.
  6. Load the vanilla ice cream mix to your ice cream maker, along with 1/3 of a can of condensed milk caramel and set it to 30 minutes.
  7. Chop up your chocolate covered caramel into small chunks with a vegetable knife.
  8. After 30 minutes add in your chocolate chunks.
  9. Allow the ice cream maker to churn for 15 more minutes to nicely mix in the chocolate.
  10. Transfer to the freezer for an hour and then serve.

Notes

  • If you want your ice cream quicker, then I recommend 20 minutes in the freezer instead of 1 hour in the fridge.
  • We have made this with both munchies and rolo chocolate. With either make sure they are chopped into bite sized chunks.
  • Avoid loading the chocolate chunks in at the beginning. The caramel will go like rocks and break your teeth.
  • If you prefer you can print off a separate recipe for our instant pot condensed milk to caramel.
  • Do note that before freezing it the caramel chew chew is a little liquid based like you see below. But trust me when I say it does firm up in the freezer. Then when you take it from the freezer it like a real tub that takes a few minutes to fully soften.
