Instant Pot Crack Chicken Pasta
Description
This recipe starts by sautéing chicken breast cubes with olive oil and ranch seasoning in the Instant Pot to develop flavor. Then chicken broth, water, and penne pasta are added, and the pot is sealed and cooked under high pressure for a short time. This cooks the pasta and chicken together efficiently.
After pressure cooking, cream cheese, shredded cheddar, and cooked crumbled bacon are stirred in to create a creamy sauce coating the pasta and chicken. The combination of ranch seasoning and cheeses gives a tangy, rich flavor, while bacon adds smoky crunch and depth.
The dish is ready to serve after allowing the cheese to melt fully. It can make a satisfying weeknight dinner that combines protein, starch, and creamy sauce all prepared in one pot for convenience.
The recipe notes the source as adapted from Plain Chicken but contains straightforward steps and ingredients.
Ingredients
- 1 lb chicken breast boneless, skinless, diced
- 2 tablespoon olive oil
- 1 oz ranch seasoning mix
- 3 cups chicken broth
- 2 cups water
- 1 lb penne pasta or pasta of choice
- 1/2 cup Bacon cooked, crumbled
- 8 oz cream cheese
- 1 cup cheddar cheese shredded
Instructions
- Turn the Instant Pot to saute and add in the olive oil, chicken, and Ranch.
- Toss to coat chicken thoroughly and allow to cook for about 4 minutes, or until chicken is just about cooked through.
- Add in the chicken broth, water, and Pasta.
- Turn saute function off and place lid securely on top. Ensure valve is to sealing position.
- Cook manual, high pressure, for 4 minutes.
- Once 4 minutes is up, do a quick release.
- Stir in the cream cheese, cheddar cheese, and bacon.
- Allow to sit for about 2 minutes, or until cheese has melted.
- Serve and enjoy!
Notes
- Cook chicken and pasta entirely in the Instant Pot to save preparation and cleanup time.
- Use diced boneless, skinless chicken breast for even cooking and quick sautéing.
- Allow cream cheese to melt fully after pressure cooking for a smooth sauce texture.
- Add crumbled cooked bacon last to maintain some texture and smoky flavor in the dish.
