Ingredients
- 2.5 tbsp coconut oil
- 1/2 cup (115g) popcorn kernels
- Seasonings to your taste - eg salt sugar, cinnamon, nutmeg, marshmallows, nuts, chocolate etc.
Instructions
- Switch on your Instant Pot, choose sauté setting and select more or high depending on your Instant Pot model .
- Leave it on till the display says high and then add the coconut oil and let it melt completely and begin to sizzle.
- Add 3 popcorn kernels and stir the kernels are coated with oil and cover the pot.
- When the kernels start to pop then you add the rest of the kernels and use a spatula to mix till they are all coated.
- Cover with a glass lid, leaving slightly ajar and the popcorn will start popping in about 3 mins.
- During popping, lift out the Instant Pot insert and gently swirl so that the unpopped kernels drop to the bottom. Do this a couple of times so that more kernels pop this way.
- In about 4-5 min the popping will slow down so turn of the Instant pot then, wait for 30 seconds for any final pops and then decant the popcorn into a large bowl.
- Add any seasonings you desire, mix and serve.

Notes
- Well, you can serve various treats with your Instantpot Popcorn depending on what the occasion is. Here are a few ideas to start you off below, but remember the sky is the limit.
- A few tips that help to make popcorn in your Instant Pot super easy.
- Instant Pot Infused Water.
- With Coconut Caramel Sauce.
- On top of a chocolate cake with caramel drizzled all over.
- Leave the lid ajar - Try to leave the lid open a tiny bit as this helps to reduce the steam so you get nice crispy popped kernels. Keep ajar with a wooden spoon.
- Shake to pop the kernels – If you lightly shake the Instant Pot during the popping, the kernels will sink to the bottom and more of them will pop. Do this every 45 secs.
- Hold off the salt - If you avoid salting the popcorn as you cook it in the Instant Pot, it gives you more flexibility with flavourings at the end.
- The right amount of popcorn – stick with about half a cup of popcorn per session as having too much will result in there being too many unpopped kernels
- The right oil – you will need to use oil with a higher smoke point as you will be cooking at a high temperature. So as unrefined coconut oil is what you need.
- For the plain pressure cooker variety listed in the recipe card, there are 4 Blue Plan Smartpoints per serving.
