Instant Pot Pork Loin with Apples and Mashed Potatoes

This tasty Pork Loin with Apples and Mashed Potatoes dinner can be made in your Instant Pot in about 45 minutes.

Ingredients
- 2 Tablespoon butter
- 1 1/2 - 2 1/2 pound pork loin filet
- 2 teaspoon rosemary
- 2 teaspoon fennel
- salt and pepper to taste
- 3 apples peeled and sliced
- 1 cup apple juice or apple cider
- 6 medium potatoes peeled and chopped
- 1/4 cup butter
- 1/4 cup milk
- 1/2 teaspoon salt
Instructions
- Put the Instant Pot on Saute and melt the butter.
- Season the pork loin roast with rosemary, fennel, salt and pepper. Brown the pork loin on all sides, taking about 5 minutes.
- Peel and slice the apples while the pork browns.
- Remove the pork to a plate and add the apples. Saute for 5 minutes.
- Peel and halve the potatoes while the apples cook.
- Turn off the Instant Pot. Add the apple juice or apple cider to the Instant Pot and deglaze the pot. Scrape the bottom of the Instant Pot with a wooden spoon to make sure no browned bits of pork or apple are stuck to the bottom.
- Return the pork to the Instant Pot on top of the apples.
- Put the cut potatoes in a steamer basket and set it on a trivet over the pork.
- Put the lid on the Instant Pot. Set it for Manual mode, 15 minutes. It will take about 10 minutes for the Instant Pot to reach pressure.
- When the timer goes off let the pressure release naturally for 10 minutes. Then manually release the remaining pressure.
- Take the pork roast out and use a meat thermometer to make sure it has reached a minimum of 145 F. Set aside to rest for a few minutes.
- Put the potatoes in a bowl and mash with the butter, milk and salt.
- Use a slotted spoon to remove the apples from the Instant Pot and place them next to or on top of the pork roast.
Notes
- This recipe was specifically written and tested with a pork loin roast 1 1/2 - 2 1/2 pounds. Changing the type or size of pork roast used will require changing the cooking time, which will probably mess up the timing for the potatoes and apples. So if you don't have a pork loin roast 1 1/2 - 2 1/2 pounds I'd recommend finding a different recipe.
- You can use chicken broth instead of apple juice in the recipe, but then the pork won't taste as "appley".
- Use a firm apple for this recipe - I used Honey Crisp apples.
- I make this recipe in a 6 quart Instant Pot. If you have an 8 quart model you should probably increase the amount of apple juice to 1 1/2 cups.
