Irish Pancakes (Boxty)

Irish Pancakes, or Boxty, combine both boiled and raw potatoes mixed with flour, baking soda, salt, butter, and buttermilk to make a dense, tender batter. The raw potatoes are grated and squeezed to remove excess starch, preserving texture and preventing discoloration. The batter is cooked on a hot griddle until golden brown, creating pancakes with a crispy exterior and soft interior. This traditional potato pancake is hearty and can be a breakfast or side dish option.

Description

The recipe uses a mix of boiled and grated raw potatoes to balance softness with a slight texture in the pancakes. Boiled potatoes are mashed for smoothness, while grated raw potatoes are drained of starch using a clean cloth to avoid browning and to create the characteristic texture of boxty. Flour, baking soda, and salt are added to bind the potatoes together, and buttermilk adds acidity and richness to the batter. Butter is used to grease the cooking surface.

Cooking the boxty on an electric griddle at 350°F in butter results in a golden-brown crust with a tender center. The potatoes lend a moist interior and mild flavor, making these pancakes suitable as an accompaniment to savory dishes or as a filling breakfast option.

Ingredients

  • 2.5 lbs potato 40 oz
  • 15 oz flour all purpose
  • 2 tsp baking soda
  • 3 tsp salt
  • 1 tbsp butter
  • 20 fl oz buttermilk

Instructions

  1. Peel the potatoes. Cut half of the quantity into small chunks, to ensure quicker cooking.
  2. Submerge them in water, add 1 tsp salt and boil for about 5-7 minutes until soft when pierced with a knife. Drain off the water and mash them using a hand held masher or a fork.
  3. When the first half of the potatoes are boiling, grate the other half using a box or handheld grater. 
  4. Place the grated potatoes onto a clean cheesecloth or lint free drying cloth. Gather up the corners and sides and squeeze the starchy liquid out of the raw grated potatoes.
  5. In a bowl, mix the flour, salt and baking powder. Toss the dry grated potatoes with the flour mixture to reduce browning of the potatoes. Add the mashed potatoes to the bowl.
  6. Add the buttermilk to the bowl and mix everything together using a spatula or wooden spoon. Do not over mix.
  7. Pre heat an electric flat top griddle to 350 degrees F. Add a knob of butter and when it melts, brush it over the surface to grease it.
  8. Spoon some Irish Pancake batter onto the griddle surface.
  9. Fill the griddle with Irish Pancakes. I was able to fit 8 on mine.
  10. Fry one side of the pancake until golden brown (about 5 minutes) and then flip to allow the other side to cook.
