Ingredients
- 1 rotisserie chicken or Smoked Chicken
- 1 Pound hot Italian sausage
- 15 Ounce black beans Drained
- 15 Ounce Ranch Style Beans
- 15 Ounce light red kidney beans
- 15 Ounce southwest style corn
- 32 Ounce chicken broth
- 3 Tablespoons ranch seasoning
- 1 Tablespoons taco seasoning
- 3 Hatch green chiles Or 4 Ounce can diced green chiles
- 8 Ounce Habanero Jack or Pepper Jack Cheese Shredded
- 8 Ounce cream cheese
- 1 red onion Diced
- 3 garlic cloves Minced
Instructions
- Heat a Dutch oven or soup pot over medium heat. Brown the Italian sausage, breaking it up as it cooks.
- Once the sausage is cooked, add the diced red onion and cook for 4-5 minutes, until softened. Add in the diced green chiles and minced garlic and cook for 1-2 more minutes.
- Once the vegetables are cooked, drain the excess grease. Pour in the chicken broth or chicken stock along with the rest of the ingredients.
- Bring the soup to a boil, then reduce heat to low. Stir to make certain all of the cheese is fully melted. Simmer for 20-30 minutes then reduce to low until you are ready to serve.
