Italian Sausage and Peppers

This hearty and comforting Italian Sausage and Peppers Pasta features al dente spaghetti, spicy Italian sausage, vibrant bell peppers and a simple yet flavorful sauce.

Ingredients

Servings
  • 4 Tbsp. olive oil, divided
  • 1 small white or yellow onion, chopped
  • 3 bell peppers, chopped - multicolors (red, yellow, orange)
  • 2 tsp. garlic, crushed (~3-4 cloves)
  • 1 tsp. fennel seeds
  • 1 tsp. Italian seasoning
  • 1/2 tsp. kosher salt
  • freshly ground black pepper, to taste
  • 1/2 tsp. red pepper chili flakes (optional)
  • 1, 12 oz. package Italian chicken sausage, sliced into rounds
  • 1, 28 oz. can crushed tomatoes
  • Cooked Spaghetti

Instructions

  1. Heat 2 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Add the onions; cook, stirring occasionally for ~5 minutes.
  2. Add the chopped bell peppers and continue to cook for another 5 minutes, stirring occasionally.
  3. Add the garlic, fennel seeds, Italian seasoning, salt, pepper and red pepper chili flakes if desired. Stir until fragrant, ~1 minute.
  4. Push the onions and bell peppers to one side of the skillet to make room for the sausage.
  5. Add the sliced chicken sausage rounds and remaining olive oil and cook for ~5 minutes until sausage browns on each side.
  6. Stir together cooked sausage and bell pepper and onion mixture. Add in crushed tomatoes. Bring to a boil; then reduce heat to medium-low and simmer for 5 minutes. Taste, and adjust salt and pepper if needed.
  7. Serve over cooked spaghetti pasta (or pasta of choice). Garnish with parmesan cheese if desired.

Notes

  • Feel free to use sweet, spicy or mild sausage. 
  • Use pasta of choice, we love it with spaghetti!
  • This meal is an all in one (carbohydrate, veggie and protein) but pairs well with a dinner salad too.
