Jajik is a delicious Middle Eastern yogurt sauce with cucumber, garlic and dried mint, perfect to accompany so many dishes.

Ingredients
- 2 large cucumbers
- 16 oz PLAIN yogurt 500 g, 2 cups
- 2 garlic cloves, crushed or finely minced
- 1 teaspoon dried mint
- 1/2 teaspoon salt, more to taste
Instructions
- Grate the cucumbers, and squeeze out any extra water. Alternately, you can finely diced the tomatoes. No need to peel in either case.
- In a medium bowl, mix together the yogurt, cucumbers, garlic, dried mint and salt. Taste, and adjust seasoning as you like.
- Store in the fridge until ready to serve!
Notes
- You can use more garlic if you like- I like mine extra garlicky so usually add an extra clove or two.
- I use regular yogurt, usually whole milk but have made this with low fat yogurt successfully.
- You can easily double this recipe (or halve it). It keeps well in the fridge and the flavor actually develops more overnight.
