Jalapeno Chicken
Description
This dish starts by coating chicken thigh pieces with cornstarch, salt, and pepper before searing them in oil over medium-high heat to develop a browned exterior and cooked interior. Separately, a sauce of soy sauce, water, brown sugar, sesame oil, and minced garlic is prepared.
Onions and sliced jalapenos are sautéed in the same pan until softened, which mellows their sharpness and brings out sweetness and heat. The chicken and sauce mixture is then returned to the pan to combine and cook briefly, allowing flavors to meld and the sauce to thicken slightly.
Garnished with toasted sesame seeds and served over cooked white rice, this dish balances spicy tones from jalapenos with sweetness from brown sugar and savoriness from soy and garlic. The cornstarch coating helps the chicken develop a thin crispy texture that holds the sauce well.
The recipe can also be adapted for air fryer cooking, where the coated chicken is cooked at 400°F for about 10 minutes, turning halfway, to reach safe doneness while retaining a crispy texture before proceeding with the sauce and vegetables.
Ingredients
- 2 pounds chicken thigh fat removed, cut into 1-inch pieces, boneless skinless
- ¼ cup corn starch 32 g
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper ground
- 2 tablespoons extra virgin olive oil
- ⅓ cup soy sauce
- ⅓ cup water
- ⅓ cup light brown sugar packed, 67 g
- 1 teaspoon sesame oil
- 2 teaspoons garlic minced
- ½ yellow onion diced
- 2 large jalapeno pepper sliced into thin rounds
- sesame seeds for garnish
- white rice for serving, cooked
Instructions
- In a large mixing bowl, combine chicken, cornstarch, salt, and pepper. Toss to coat evenly on all sides. Set aside.
- In a medium mixing bowl, combine water, soy sauce, brown sugar, sesame oil, and garlic. Mix well and set aside.
- To a large nonstick skillet over medium-high heat, add oil.* When the oil is shimmering, carefully add chicken to the hot oil. (Depending on the size of the skillet, you may have to work in batches.) Cook for 2-3 minutes per side, or until browned and cooked through to an internal temperature of 165°F. Transfer the chicken to a plate, and tent to keep warm.
- To the same skillet, add onions and jalapeno. Cook until softened (about 4-6 minutes).
- Add the chicken and the soy sauce mixture to the pan and stir to combine. Continue to cook for 2-3 minutes.
- Serve garnished with sesame seeds over cooked white rice.
Notes
- For air fryer preparation, preheat to 400°F and cook coated chicken for about 10 minutes, flipping halfway until the internal temperature reaches 165°F.
- Cook the sauce and vegetables separately after air frying to combine the flavors and finish the dish.
