Jalapeno Peach Chicken

Jalapeno Peach Chicken pairs juicy boneless skinless chicken thighs with a sweet and tangy peach glaze featuring peach preserves, soy sauce, and a hint of heat from jalapeno slices and red pepper flakes. The dish balances savory chicken with softened peaches and spicy jalapenos from a skillet cooking method. It suits dinners that want a combination of fruity sweetness and gentle heat.

Description

Jalapeno Peach Chicken centers on chicken thighs seasoned with chili powder, salt, and black pepper, pan-seared to a golden finish. The accompanying peach glaze combines preserves, olive oil, soy sauce, vinegar, and spices, creating a vibrant sauce that coats the chicken and softened fruits.

Jalapenos are cooked briefly to mellow their sharpness, while sliced peaches add sweet juiciness. The glaze poured into the skillet after cooking the chicken and fruits brings all the elements together, creating a sauce with layers of sweet, tangy, and mildly spicy flavors. The chicken is cooked in batches to ensure proper searing and tenderness.

This dish can stand on its own or be served alongside rice or vegetables to balance the bold peach and jalapeno flavors. The relatively simple cooking process leverages fresh fruit and spices to create a dynamic main course.

Ingredients

Servings

Peaches

  • 2 yellow peach pitted, sliced

Peach Glaze

  • ½ cup peach preserves 160 g
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic minced
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes

Chicken

  • 2 pounds chicken thighs boneless, skinless
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper thinly sliced

Instructions

Peach Glaze

  1. To a medium bowl, add the glaze ingredients. Mix until incorporated. Set aside.

Chicken

  1. Pat chicken dry.
  2. In a small bowl, combine salt, black pepper, and chili powder.
  3. Apply the seasoning mixture to the chicken.
  4. To a large nonstick skillet over medium heat, add oil. Once hot, add chicken thighs. (Depending on the size of the skillet, you may have to work in batches.) Cook chicken for 5 minutes. Then, flip over the chicken, reduce heat to medium-low, and cook for an additional 5 minutes, or until the chicken reaches an internal temperature of 165°F. Remove from heat. Transfer the chicken to a plate. Tent to keep warm.
  5. To the same skillet and raising the heat back up to medium, add jalapeno peppers. Cook for 3 minutes. Then, add the peaches in with the jalapenos. Cook for an additional 3 minutes, or until the peaches have softened.
  6. Pour peach glaze into the skillet with the peaches and jalapenos. Stir to make sure every jalapeno and peach is evenly coated in the peach glaze.
  7. Add chicken back to the skillet. Spoon glaze over the top of the chicken and cook for 1-2 minutes, or until the chicken is hot again.
  8. Serve warm.
