Keto Chicken Enchiladas

These Keto Chicken Enchiladas are loaded with tender shredded chicken, stuffed into homemade tortillas and topped with gooey cheese and a bold flavored classic enchilada sauce.

Ingredients

  • 8 Keto Tortillas
  • 4 cups cooked chicken shredded
  • 1 ½ cups Monterey jack cheese shredded
  • 1 ½ cups cheddar cheese shredded
  • 1 batch Easy Enchilada Sauce divided
  • yellow onion diced
  • 1 tablespoon olive oil
  • Optional: Cilantro

Instructions

  1. Preheat oven to 350°F.
  2. Heat a large skillet to medium and add in the olive oil and onion, sauté for a few minutes until the onion is translucent.
  3. Add in the chicken and ½ cup of the enchilada sauce, stir until well combined.
  4. Remove from the heat and allow to cool slightly while you prepare your casserole.
  5. Take a 9 x 13 casserole baking dish and spray with nonstick spray. Spread a small about of the enchilada sauce over the bottom of the pan and save the rest for the tops.
  6. Add ⅛th of the chicken mixture to one side of each tortilla. Mix the 2 shredded cheeses together, then add some over the chicken and roll it up.
  7. Place it seam side down in your prepared baking dish and repeat with the remaining tortillas. Pour the remaining of enchilada sauce over the tops, then add the remaining cheese over the tops.
  8. Bake for 25-30 minutes or until the cheese is melted and bubbling.
  9. Allow to cool slightly before serving and top with your favorite toppings: Fresh cilantro, sour cream, sliced avocado, salsa, pickled jalapeño peppers, diced red onion and/or chopped scallions.

Notes

  • If you don't want to make your own Keto tortillas, you can use any store bought tortilla, just be sure it's Keto friendly.
  • If you can't find Monterey jack cheese, you can use any Mexican blend of cheese that you like.
