Instructions

  1. Prepare and bake your pie crust per the directions, baking 15-18 minutes. If the edges get dark too quickly, lightly cover them with aluminum foil or Then remove it from the oven and allow to cool at room temperature while you prepare the filling.
  2. Add the heavy cream to a mixing bowl and beat it until you have stiff peaks. Place it in the fridge while you make the custard.
  3. Add the eggs and sweetener to a heat proof mixing bowl set over boiling water to make a double boiler. Simmer your water on medium low heat and place the mixing bowl over the top. Mix constantly a hand mixer, for 12-15 minutes. If you don’t have a hand mixer, you can use a whisk and mix by hand, but the hand mixer makes it much easier.
  4. Once that’s ready it will be very pale yellow color and will have thickened up. Take it off the heat and mix in the vanilla extract, then set it aside to cool slightly.
  5. Add the chocolate chips to a microwave safe bowl and heat it in the microwave for 1 minute, remove and stir. Then reheat it in 10 second increments until it has fully melted.
  6. Add half the butter and half the melted chocolate into the eggs and sweetener mixture, then mix using your hand mixer. Repeat with the remaining butter and chocolate and continue mixing for 3 minutes.
  7. Gently fold in the whipped cream until well combined.
  8. Once there are no streaks of chocolate remaining, pour the mixture into your cooled pie crust. Chill it in the fridge over night or at least 8 hours until it has fully set.
  9. You can add some (optional) whipped cream and grated chocolate over the top before cutting and serving.
  10. Store leftovers in your fridge for 5-6 days.
