Description

The Keto Dinner Rolls recipe blends almond flour, psyllium husk powder, egg whites and yolks, and leavening agents to create a dough that is shaped into individual rolls and baked until browned. Psyllium husk powder absorbs moisture and adds structure, helping mimic the texture of traditional wheat rolls. Separating and whipping the eggs contributes volume and lightness while combining the yolks separately adds richness.

The dough is wet-formed into a ball and divided into eight rolls, which can be optionally topped with a cross-cut and seeds for texture. Baking at 180°C (356°F) for about 25-30 minutes yields rolls with a soft crumb and firm exterior. These rolls are designed to be low in carbohydrates, containing about 2 grams net carbs each, supporting keto dietary goals.

Ingredients

  • 2 cup/ 200 g almond flour ground almonds work well
  • 2 egg room temperature, separated
  • 2 egg room temperature, white
  • 3 tbsp / 24g psyllium husk powder 6 tablespoon if using psyllium husks
  • ½ cup / 120 ml water hot
  • 2 teaspoon baking powder
  • ½ teaspoon xanthan gum
  • pinch salt

Instructions

  1. Preheat the oven to 180 Celsius / 356 Fahrenheit.
  2. Separate the eggs. Beat all 4 egg whites until stiff peaks form. In a separate bowl, whisk the 2 egg yolks until they have doubled in size and are pale in colour.
  3. Mix the almond flour, psyllium husk powder, xanthan gum and baking powder together. Then add to the egg white and egg yolk , together with the hot water. Blend until combined - don't over-blend!
  4. Wet your hands with water or oil them slightly, so the dough does not stick to your hands. Form a large dough ball and cut into 8 pieces. Form 8 rolls and place them on a baking sheet lined with parchment paper.
  5. Optional: Cut a cross on the tops of your rolls and sprinkle with poppy/sesame/nigella seeds
  6. Bake for circa 25 - 30 minutes on the middle shelf until browned on top.

Notes

  • Each roll contains approximately 2 grams net carbohydrates.
  • This recipe makes 8 dinner rolls.
