Keto Fried Green Tomatoes (Gluten-Free)

Enjoy this old Southern favorite Keto style.  These fried green tomatoes are served with a Low Carb zesty dipping sauce that really brings them to life!

Ingredients

For the Tomatoes

  • 3 medium green tomatoes
  • ½ cup almond flour
  • ½ cup grated Parmesan cheese
  • ½ cup ground pork rinds plain
  • 1 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • ½ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • 2 eggs beaten
  • Mild flavored oil of your choice for frying

For the Dipping Sauce

  • ½ cup mayonnaise
  • 2 teaspoons prepared horseradish
  • 2 tablespoons Sugar-free ketchup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt
  • 2 teaspoons fresh lemon juice

Instructions

  1. Cut the tomatoes into ¼-1/2 inch slices and press between paper towels to dry them. I was able to get 15 slices out of mine.
  2. Whisk all the sauce ingredients together and allow to sit while you fry the tomatoes.
  3. Mix the almond flour, parmesan cheese, pork rinds, oregano, parsley, garlic salt and basil together in a bowl. Beat the eggs together in a separate bowl.
  4. Dip the tomatoes into the egg and then into the breading mixture (lightly, do not press into the mixture). Shake off any excess breading and place on a plate.
  5. Once they are all breaded, heat a skillet to medium high heat and add the oil. Shallow fry the tomatoes in batches for a few minutes on each side or until golden. Place on another plate lined with paper towels, as you remove them from the pan.
  6. Serve with the dipping sauce and enjoy!
