  • ½ cup milk chocolate chips sugar-free
  • cup Monk Fruit Sweetener or allulose
  • ½ cup almond flour
  • ½ cup butter softened
  • ¼ cup cocoa powder unsweetened
  • 2 egg whole
  • 1 teaspoon instant coffee
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Add the butter and chocolate chips to a microwave safe bowl and heat in the microwave for 30 seconds. Stir and continue heating in 10 second increments, if needed, until the chocolate is melted. Whisk in the instant coffee.
  3. Once the mixture has cooled, add in the eggs, vanilla and the sweetener and mix using a hand mixer.
  4. Sift the almond flour and cocoa powder, then add them into the chocolate mixture. Mix just until combined.
  5. Pour into an 8 x 8 glass baking dish lined with parchment paper, then smooth the top with an offset spatula.
  6. Bake for 18-20 minutes or until a toothpick, when inserted, comes out mostly clean.
  7. Allow to cool completely before cutting into squares.
