Description
Keto Fudge Brownies are made by melting softened butter with sugar-free milk chocolate chips and instant coffee, giving the batter a deep chocolate flavor and a subtle coffee note. After cooling, eggs, vanilla extract, and monk fruit sweetener are mixed in. Almond flour and unsweetened cocoa powder are sifted and folded into the mixture to form the batter. The batter is spread into a parchment-lined 8 x 8 inch baking dish and baked at 350°F until mostly cooked through, as tested by a toothpick.
The brownies have a fudgy texture with rich chocolate flavor accentuated by the coffee. The baking time ensures a moist center with slightly firmer edges. Cooling completely before slicing helps maintain shape. This recipe avoids traditional sugar, making it suitable for those following ketogenic or low-carb lifestyles without sacrificing the chocolate indulgence.
Ingredients
- ½ cup milk chocolate chips sugar-free
- ⅔ cup Monk Fruit Sweetener or allulose
- ½ cup almond flour
- ½ cup butter softened
- ¼ cup cocoa powder unsweetened
- 2 egg whole
- 1 teaspoon instant coffee
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F.
- Add the butter and chocolate chips to a microwave safe bowl and heat in the microwave for 30 seconds. Stir and continue heating in 10 second increments, if needed, until the chocolate is melted. Whisk in the instant coffee.
- Once the mixture has cooled, add in the eggs, vanilla and the sweetener and mix using a hand mixer.
- Sift the almond flour and cocoa powder, then add them into the chocolate mixture. Mix just until combined.
- Pour into an 8 x 8 glass baking dish lined with parchment paper, then smooth the top with an offset spatula.
- Bake for 18-20 minutes or until a toothpick, when inserted, comes out mostly clean.
- Allow to cool completely before cutting into squares.
