Keto Peanut Butter Cups

For the Chocolate Layers

  • 10 ounces sugar-free semi-sweet chocolate chips
  • 3 tablespoons powdered monk fruit/allulose
  • 2 tablespoons coconut oil

For the Peanut Butter Center

  • cup no sugar added peanut butter
  • 2 tablespoons powdered monk fruit/allulose
  • 2 tablespoons unsalted butter
  • ½ teaspoon vanilla extract

Instructions

  1. Add the chocolate chips and coconut oil in a small mixing bowl.
  2. Melt in the microwave in increments of 30 seconds, stirring in between, until fully melted.
  3. Whisk in the sweetener until combined.
  4. You should have around 1 cup of the melted chocolate mixture. Pour half the mixture into the bottom of 12 silicone muffin cups. Swirl the chocolate around so that it reaches up the sides slightly.
  5. Place in the fridge to set while you prepare the filling.
  6. In a separate mixing bowl, add in the peanut butter, butter, sweetener and vanilla extract.
  7. Melt in the microwave, just until softened. You’re not looking to completely liquify the mixture.
  8. Using a small scooper, scoop out 12 portions and drop them in the center of each of the muffin cups. Be sure to gently spread the mixture evenly, while still keeping it away from the edges. Place them back into the fridge and chill until the mixture firms up a bit.
  9. Lastly, pour the remaining chocolate mixture over each muffin cup, first around the edges, then over the tops. Gently swirl them so the chocolate is covering the peanut butter in an even layer.
  10. Place them back into the fridge to set and once they have firmed up, they’re ready to enjoy!
  11. Store them in the fridge in an airtight container.
