Ingredients
Fried Chicken
- 2 boneless chicken thighs
- ½ tsp. curry powder
- ¼ tsp. turmeric powder
- ½ tsp. lime juice
- ⅛ tsp. salt
- ½ tsp. coconut oil
Nasi Lemak
- 3 tbsp. coconut milk
- 3 lices ginger
- ½ small shallot
- ¼ tsp. salt or to taste
- 7 oz. riced cauliflower
- 4 lices cucumber
Fried Egg
- 1 large egg
- ½ tbsp. unsalted butter
Instructions
- Rice cauliflower and squeeze water out.
- Marinade chicken thighs with curry powder, turmeric powder, lime juice and salt.
- Prepare sambal by following this recipe.
- Fry marinated chicken.
- In a saucepan, boil coconut milk, ginger and shallot. Once bubbling, add the cauliflower rice and mix well.
- Serve with 2 slices cucumber and a fried egg along with sambal and fried chicken.
