Key lime pie bars are classic key lime pie flavors baked into delightful little bars. They have a buttery graham cracker crust and a creamy lime filling. The sweet and zingy lime flavors make for an irresistible treat!

Ingredients
Crust
- 1 cup graham cracker crumbs, about 8 crackers
- ¼ cup granulated sugar
- 4 tablespoons salted butter, melted
Key Lime Filling
- 4 egg yolks
- 1 tablespoon key lime zest
- ⅔ cup key lime juice
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup granulated sugar
Whipped Cream
- 1 cup heavy cream, chilled
- ¼ cup powdered sugar
- Lime zest, for garnish
Instructions
Crust
- Preheat the oven to 350 degrees Fahrenheit. Line an 8x8-inch pan with parchment paper and coat with non-stick cooking spray.
- Place 1 cup graham cracker crumbs, ¼ cup granulated sugar, and 4 tablespoons salted butter, in a bowl and mix until well combined.
- Firmly press the graham cracker mixture into the bottom of the pan in an even layer.
- Bake the crust for 10 minutes.
Key Lime Filling
- Beat 4 egg yolks with an electric hand mixer until smooth and creamy, 2-3 minutes. Mix in 1 (14-ounce) can sweetened condensed milk.
- Add the ⅔ cup key lime juice, 1 tablespoon key lime zest, and ¼ cup granulated sugar, then beat until completely smooth.
- Pour the filling over the crust then bake for 15 minutes or until the filling is just set.
- Cool the bars completely then refrigerate for at least 4 hours or up to 3 days.
Whipped Cream
- Place 1 cup heavy cream, and ¼ cup powdered sugar into a bowl then beat until stiff peaks form.
- Before serving, spread the whipped cream on top of the chilled bars.
- Cut the bars into 9 equal pieces and garnish with lime zest, and wedges.
