  • 1 tablespoon extra virgin olive oil
  • 1 ring kielbasa sliced into ¼-inch rounds, 13.9 ounces
  • 1 small yellow onion finely diced (about ½ cup
  • ½ cup sun-dried tomatoes soaked in hot water, drained, chopped, about 8 whole
  • 2 tablespoons garlic minced
  • 3 cups chicken broth 24 ounces / 720 g
  • 2 cups water
  • 1 cup heavy cream
  • 1 block cream cheese softened
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 16 ounces potato gnocchi uncooked
  • 1 cup spinach fresh leaves, 30 g
  • parsley chopped for garnish
  • Parmesan Cheese grated for garnish

Instructions

  1. To a large pot over medium-high heat, add oil. Once hot, add kielbasa and heat for about 3-5 minutes on each side, or until brown and slightly crispy on the edges.
  2. Add onions and sun-dried tomatoes. Cook until the onions are softened (about 3-5 minutes).
  3. Add garlic and cook for 1 minute.
  4. Add chicken broth, water, heavy cream, cream cheese, Cajun seasoning, pepper, and red pepper flakes. Stir until the cream cheese is fully melted and creamy.
  5. Add the gnocchi to the pot and cook for 2-3 minutes, or according to the package instructions. Fully cooked gnocchi will float to the surface when ready.
  6. Stir in spinach. Reduce heat. Let the soup simmer for a few minutes until the spinach wilts.
  7. Garnish with chopped fresh parsley and parmesan cheese. Please note: The soup will thicken as it sits.
