Description
Kiwi mojitos combine peeled kiwi fruit blended with lime juice and simple syrup to create a coarse kiwi puree that forms the cocktail’s base. Optionally, mint leaves can be added to the puree for an extra burst of aroma. The puree is then mixed with rum in a large pitcher, with the amount of rum adjustable to taste.
Ice cubes, fresh mint leaves, and sliced kiwi enhance the texture and flavor, while sparkling water or sparkling lemonade is added to provide effervescence and lighten the cocktail. Stirring gently preserves the bubbles and distributes flavors evenly. The drink can be made in bulk or individually served with similar layering of ingredients.
Garnishes of mint slices, kiwi slices, and sugared rims add a decorative touch and enhance the sensory experience. The ingredients balance sweetness, tartness, and alcohol, making this variation of mojito fruity and vibrant for warm weather or casual gatherings.
Ingredients
- 6 to 8 kiwi peeled and cut into halves or quarters
- lime juice from 1-2 limes
- simple syrup adjust to taste, ~ ½ cup or sugar
- 1 oz rum adjust to taste, ~1 ½ oz per person
- 4 kiwi peeled and sliced
- 4 ounces mint leaves
- sparkling water add more to taste - can also use sparkling lemonade (reduce the amount of sugar or simple syrup if using sparkling lemonade, ~2 cups
- ice
Garnishes:
- kiwi slices; leaves
- mint slices; leaves
- sugar for cocktail glass rims
Instructions
- Place the peeled kiwi pieces in a blender or small food processor with the simple syrup/sugar and lime juice, pulse until you have coarse puree. If you want an extra minty flavor for the mojitos, then add some mint leaves into the blender.
- If all the drinks will have alcohol, in a large pitcher, mix the kiwi puree with the rum, you can start by adding a lower amount and then adjust as you taste the final drink.
- Next add some ice cubes, mint leaves, and kiwi slices to the crushed kiwi and rum mix.
- Add the sparkling water or sparkling lemonade, stir gently and taste. Add more rum, sparkling water, lime juice, or simple syrup if desired. Top off with additional ice cubes and mint leaves.
- To make the drinks in individual glasses, follow a similar process as for the pitcher, but add a couple of kiwi slices and mint leaves at the beginning.
- To make the “add your alcohol to taste variation” follow the same steps without adding the rum, and let each person mix in the amount or type of rum/alcohol they desire.
- Moisten the rims of the glasses with a slice of lime and garnish the rims with the regular sugar, a cocktail flavored rimming sugar, or cookie sugar sprinkles.
