Korean Seaweed Soup (Miyeokguk)
Description
This Miyeokguk recipe starts by soaking dried seaweed until soft, then cooking it with minced onion and small pieces of stew beef in neutral and sesame oils. Garlic and Korean soup soy sauce add depth of flavor as the seaweed and beef cook together.
Rice water or plain water is added and simmered until the seaweed becomes tender but still retains a pleasant chew. The finished soup is seasoned further with additional soy sauce, optional Korean tuna sauce, salt, and a finishing drizzle of sesame oil. This results in a light broth with umami-rich flavors from the seaweed and beef, with subtle nuttiness from sesame oil.
Miyeokguk pairs well with rice and kimchi for a balanced Korean meal. It is often eaten for its comforting qualities and nutritional benefits.
