Lasagna Soup
Description
Lasagna Soup takes the key elements of traditional lasagna—meat, pasta, and cheese—and melds them into a warm, comforting soup. It starts with cooking farfalle noodles separately before browning a mixture of ground beef and Italian sausage with onions, garlic, and spices for depth. The addition of chicken broth, pasta sauce, and a touch of water creates a flavorful base that simmers and reduces to concentrate flavors. When combined with cooked noodles, fresh basil, parmesan cheese, and heavy cream, the soup achieves a creamy, rich texture reminiscent of lasagna layers. Topping each serving with ricotta cheese and extra basil introduces cool, creamy highlights that balance the hearty broth.
The soup’s texture balances tender pasta with well-seasoned meat and a slightly thickened broth, making each spoonful satisfying. Using farfalle noodles provides a sturdy shape that holds up well in the liquid without becoming mushy.
Serve this soup on its own for a warming meal, or alongside a green salad and crusty bread to round out the dinner. The recipe is flexible with the option to use ground beef only or a mix with Italian sausage depending on your preference. The inclusion of heavy cream adds smoothness but can be adjusted for a lighter version.
