Ingredients
- 1 lb ground beef or Italian sausage
- 1 small onion diced
- 3 cloves garlic minced
- 4 cups beef broth
- 1 28 oz can crushed tomatoes
- 1 15 oz can tomato sauce
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes optional
- 8 lasagna noodles broken into pieces
- 1 cup ricotta cheese
- ½ cup shredded Mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh basil chopped (for garnish)
Instructions
Step No.1: Brown the Beef
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat and add the diced onion and garlic. Cook for 2-3 minutes until softened.
Step No.2: Add Broth and Tomatoes
- Pour in the beef broth, crushed tomatoes, and tomato sauce. Stir in Italian seasoning, salt, black pepper, and red pepper flakes. Bring to a simmer.
Step No.3: Cook the Pasta
- Add broken lasagna noodles to the soup and let them cook for about 10 minutes, or until tender. Stir occasionally to prevent sticking.
Step No.4: Make the Cheese Mixture
- In a small bowl, mix ricotta cheese, shredded mozzarella, and grated Parmesan. Set aside.
Step No.5: Serve and Garnish
- Ladle the soup into bowls and top each serving with a spoonful of the cheese mixture. Garnish with fresh basil and serve warm.
Notes
- Meat Options: Swap ground beef for Italian sausage or use ground turkey for a leaner option.
- Pasta Tip: Cook pasta separately if planning leftovers to prevent sogginess.
- Cheesy Topping: Adjust the cheese blend for extra creaminess.
- Vegetarian Lasagna Soup: Use vegetable broth and swap meat for mushrooms or zucchini.
- Spicy Lasagna Soup: Increase red pepper flakes or add diced jalapeños.
- Creamy Lasagna Soup: Stir in ½ cup heavy cream for a richer broth.
- Gluten-Free Lasagna Soup: Use gluten-free pasta instead of lasagna noodles.
- Low-Carb Lasagna Soup: Replace noodles with zucchini ribbons or cauliflower florets.
- Extra Cheesy Lasagna Soup: Stir in more mozzarella for a gooey, cheesy experience.
