Lavender Simple Syrup (with or without Vanilla)

A homemade simple syrup to use in drinks and more!

Ingredients
- 1/2 cup granulated sugar or honey
- 1/2 cup water
- 5 teaspoons dried lavender buds
- Splash of vanilla extract (optional)
Instructions
- In a small saucepan, combine sugar, water and lavender.
- Bring to a simmer over medium heat and cook for about 5 minutes or until the sugar has dissolved. Remove from heat and stir in the vanilla, if using. Allow to cool.
- Strain syrup through a fine mesh strainer into a jar to remove lavender buds and set aside.
- Store in a sealed container in the refrigerator for up to 3 weeks.
- One of my favorite ways to use this lavender is in a Lavender Latte!
