Lemon Pepper Chicken Skewers
Description
The chicken for these Lemon Pepper Skewers is cubed and marinated with olive oil, paprika, lemon pepper, garlic, kosher salt, and Cajun seasoning, which infuse the meat with bright citrus and smoky spice flavors. Threaded onto soaked wooden skewers, the chicken cooks quickly in an air fryer at a high temperature, helping to achieve a tender inside with light charring. A seasoned butter made from melted butter blended with the same spices and fresh parsley is brushed over the skewers after cooking, adding moisture and layered flavor.
This dish is great served hot as a main protein, appetizer, or part of a grilled meal. The versatility of cooking methods is noted in the recipe, with instructions for oven baking or grilling as alternatives to air frying. Attention to internal temperature ensures the chicken is fully cooked yet juicy.
Keeping the skewers in a single layer during cooking prevents steaming and promotes even browning. Soaking the wooden skewers beforehand helps avoid burning. The seasoned butter is freshly made while the chicken cooks, allowing it to be brushed on immediately for best flavor impact.
Ingredients
- wooden skewers soaked in water for 30 minutes
Chicken
- 2 pounds chicken breast cut into 1-inch cubes, boneless, skinless
- 2 tablespoons extra virgin olive oil
- ½ teaspoon paprika
- ½ teaspoon kosher salt
- ½ teaspoon lemon pepper
- ½ teaspoon garlic minced
- 1 ½ teaspoons Cajun seasoning
Seasoned Butter
- ¼ cup butter melted, unsalted; ½ stick / 57 g
- ½ teaspoon paprika
- ½ teaspoon lemon pepper
- ½ teaspoon garlic minced
- 1 ½ teaspoons Cajun seasoning
- 1 teaspoon parsley freshly chopped
Instructions
- In a large bowl, combine the cubed chicken breasts, oil, paprika, salt, lemon pepper, garlic, and Cajun seasoning. Toss to coat the chicken evenly.
- Thread the chicken cubes onto the soaked wooden skewers, about 4-5 pieces per skewer.
- Add the skewers to the basket of your air fryer in a single layer. (Depending on the size of the air fryer, you may have to work in batches.) Air fry* at 400°F for 11-12 minutes, flipping halfway. Chicken is fully cooked when it reaches an internal temperature of 165°F. While the chicken is cooking, make the seasoned butter.
Seasoned Butter
- In a small bowl, mix the melted butter with paprika, lemon pepper, garlic, Cajun seasoning, and chopped parsley.
- Brush the seasoned butter over the cooked chicken skewers. Serve immediately.
Notes
- Wooden skewers should be soaked in water for at least 30 minutes to prevent burning during cooking.
- Oven option: bake at 400°F on a parchment-lined sheet for 20-25 minutes, flipping halfway, until an internal temperature of 165°F is reached.
- Grill option: cook over medium-high heat for 8-10 minutes per side until fully cooked.
- Brush the chicken skewers with the prepared seasoned butter immediately after cooking to enhance flavor and moisture.
